Chia Seed Pudding...healthy breakfast on the go
I LOVE breakfast. It might just be my favorite meal of the day. So many options...eggs and bacon, pancakes, Blueberry Dutch, oatmeal, smoothies, yogurt parfaits. I am always looking for breakfast ideas to add to my repertoire. Recently, my niece sent me a lentil soup recipe from a food website called Cookie + Kate. Tried it, love it and have made it 3 times since. That led me to explore her site a little further. I found this breakfast idea and now that I know there IS such a thing as Chia Seed Pudding, there are lots of recipes out there but I thought this one was quick, easy and delicious. I had to share. CHIA SEED PUDDING

TO MAKE 4 SERVINGS AT ONCE:
3 cups unsweetened almond milk
1 teaspoon orange zest
1 cup orange juice
½-1 teaspoon vanilla extract (depending on your preference)
Whisk in ¾ cup chia seeds. Pour into four individual mason jars and refrigerate.
Check the consistency after 24 hours. If it is too watery it needs more time to gel. Those chia seeds need time to plump up. This pudding can stay fresh in your fridge for up to 5 days.
Shake and serve. Topping suggestions: fresh or defrosted berries, chopped nuts, coconut, bananas, dates and a small amount of honey or pure maple syrup.
